Combat in The Witcher 3
Combat is built from reading the enemy, choosing the right sword, and weaving defence with signs, bombs and alchemy.
Short answer. Use light attacks for safe pressure, heavy attacks for committed openings, dodge for area attacks and parry only humanoid timing you can read.

Details that change the route
Remastered changes combat animation timing and adds adaptive camera behaviour. Old roll-spam muscle memory may need a few encounters to relearn.
Against groups, reposition before attacking. Locked-on aggression is the fastest route to being surrounded.
